Coconut Protein Bars

Serves: 12 bars


  • 1 cup ground almonds
  • 1 cup desiccated coconut
  • Pinch of Himalayan salt
  • 1 scoop protein powder (optional)
  • 2-3 tsp vanilla extract
  • 2-3 Tbsp. Maple syrup or honey
  • 1-2 Tbsp lemon juice or 1 tsp of lemon or orange extract
  • 200g dark chocolate, melted


  1. Blend almonds and coconut together in a food processor until very fine and starts to come together.
  2. Add the rest of your ingredients and pulse and blend a few times, until smooth and a dough comes together.
  3. Roll 1 Tbsp. of the dough into mini bars and dip in a good quality melted dark chocolate. Shake excess chocolate with the help of two forks and place on grease-proof paper.
  4. Set in the fridge for a few minutes. Keep in an airtight container or freezer bags in the fridge.
