This is a really nice alternative to the traditional cauliflower and cheese. The colour of it is really inviting and the flavour and texture is very different from what you would expect.
Preheat the oven to 190C/350F/Gas Mark 4
In a large bowl, combine the cauliflower, garlic, with cumin, coriander, paprika, turmeric, salt, pepper and oil. Mix well to coat evenly.
Line a baking tray with parchment paper and place the cauliflower onto the sheet. Bake until tender, about 20-25 minutes, stirring occasionally. Garnish with some natural yoghurt, torn coriander leaves, and crunchy pecan nuts.
Sometimes I garnish the cauliflower with some pomegranate seeds which makes for a very interesting colour and flavour.
